Potato Stuffed Paratha (Aaloo Paratha)






Today in Zim Zam Recipe you are going to be delighted with the taste of Potato fillings in your paratha.


A simple but tasty paratha is Aaloo paratha. Everyone like potato and if it is stuffed then it makes your paratha more tasty.


Number of taste you can twist to your potato fillings. Today I will help you make a simple and tasty one.


If you can know how to prepare potato fillings then you can change or twist the taste of potato fillings time to time.


All the ingredient will be available with you in your home store. Check out the following to make potato fillings.


Ingredients:


Atta (whole wheat flour)


Potato 3 (increase decrease as per person or requirement)


Onion chopped one 


Ginger little chopped


Green chilli as per taste


Coriander Leaf chopped little


Curry Leaf little 


Kasuri Methi one spoon


Dhania powder one spoon


Jeera powder one spoon


Turmeric powder half spoon


Kitchen King or garam masala one spoon


Ajwain little


Salt to taste

 

Preparation:

 

First we will start with potato. Wash the potato thoroughly and cut into two.


Now cook with adding water in your cooker with 3 to 4 whistle. 


If the whistle comes in interval with heavy steam then 3 to 4 whistle be enough, if it is whistled frequently then go for 5 to 6 whistle.


Let the cooker rest till the pressure is over. Remove the boiled potatoes out of cooker. Let it be in open air for some time.


If it is cool then remove the skin of all potatoes and smash the potato with smasher or any of the flat base bowl.


Now your potato is ready to go for final preparation.



Heat three spoon of oil. Add ginger, curry leaf and green chilli. Stir it for 2 minutes.


Now add onion. Fry till the onion changes to brown in colour.


Fry till the onion gets brown. Add turmeric powder, dhania powder,jeera powder and kitchen king masala. Stir a little add Ajwain. 


By the time you may be filled with an aromatic flavour , oop  can't wait further.


Add smashed potato. Stir a little. Then add chopped coriander leaf, kasuri methi and salt. Fry all for a few minute.


You may find your mouth watering temptation by now. Will not stop you to taste the filling, you can definitely go ahead and taste.  Yeah it's ready.


Now make atta dough for paratha. Kneading atta is much more important to get a soft and crispy paratha. 


Mix two spoon of oil and salt to atta then mix it well. Add water little and knead, repeat it till it gets to a medium level dough. Water should be less than you make dough for roti or phulka.


You can start immediately or after ten minutes. In any of the case your dough will be perfect one.


Know the process of filling potato mixture inside the dough. First take some dough.


Atleast your dough should cover the potato fillings from all side. So take sufficient dough to make a stuffed parotha.


Make the dough to a round and start flattening with your fingers rotating the dough. 



You get a flatten dough in which you have to keep your fillings. Keep the prepared potato fillings upto that level where you can cover it with remaining dough from all side.


Complete all the dough by filling and start the next process, or you can do one by one also.


Take some atta in a plate. Round filled dough may be pressed in the atta and the time to flatten with the help of rolling pin(Belna,Chakla).


You can also make a parotta out of this stuffed dough rolling over a flat smooth surface using a rolling pin (Belna). 


Flatten the dough till you find it to be pinned. Your aalu paratha is ready to go for next process.


Heat your non stick pan or iron tava. Now keep your flatten potato filled dough on the tava. 


Let it cook from both the side. You may find a small bubble or find the colour of dough changes.


Now is the time to pour ghee or oil to fry it. Fry for some time you may find that your paratha has changed to a nice deep colour. 


If you pour ghee or oil early you won't get a crispy fry of the dough from outside.


Will rather become stiff and hard. So after getting it cooked from both side use to pour ghee or oil.


Now it's time to take it out and place in your storing hot pack. Complete all one by one.
